Tuna Tomato Pesto Buckwheat Pasta-(Vegan version and Gluten Free)

 Buckwheat pesto pasta has to be one of my all time favourite dishes! Full of nutrients and packed with flavour (it’s almost too good to be true)-this dish is very quick and easy to make; to bring the PERFECT end to a hard day at work…or in my case a tiring day at school. 


If you’re a lover of simple pasta, you’re going to love this recipe. It’s big on flavor and can be both vegan and gluten free--Plus, from start to finish it requires about 20 minutes! In my world, it doesn’t get much better than that.  I make this dish most friday nights, and I love to treat my family to a big bowl of buckwheat pasta; which is completely devoured within minutes. 

Ingredients:

  • Tuna steaks (or aubergine/mushrooms for a vegan or vegetarian alternative) 
  • Buckwheat pasta (I prefer noodles) or any other gluten free pasta-spelt or brown rice is also very tasty
  • Spinach/ kale
  • 5 large handfuls of sun dried tomatoes
  • Cherry tomatoes
  • 5 large table spoons of pure tomato paste- add more depending if you ant it more runny
  • Basil leaves
  • Avocado (slice and place over the top of the dish)
  • Pine nuts 
  • Two garlic cloves
  • Vegan parmesan cheese 
  • 1 large Lemon
  • Salt and pepper




Here are some quick and easy steps to creating this masterpiece: 

Place the buckwheat pasta with kale or spinach in a colander over a saucepan with boiling water and cook until the pasta is ready. Put a dollop of coconut oil in a hot pan, and sear the tuna steaks until golden brown. I like to also chop up some juicy tomatoes and through them in with the tuna, to add a sweet and succulent taste to the dish. In a high speed blender (a Nutribullet works well) place the sun dried tomatoes, garlic, half a lemons juice, basil, pine nuts and tomato paste. Blitz until smooth or slightly crunchy if you want a bit of texture to the dish. Drain the pasta, then place them into another saucepan along with the tomato pesto and spinach/kale. Cook everything together on a low heat until the pesto is warm and the spinach has wilted. Finally squeeze the juice of the last lemon over the pasta and tuna steak, sprinkle it with salt, black pepper, avocado slices and vegan parmesan cheese before serving and enjoy!

Graduate Fashion Week 2015

Graduate Fashion Week is a four day event, that takes place at the beginning of June. Over the course of the weekend over 60 graduates, from leading universities across the country had the opportunity to showcase their end of year collections…and boy was I in for a treat! This event is the world's largest fashion spectacle, attended by many big industry celebrities. GFW has produced some of the finest designers of today- Stella Mccartney, Matthew Williamson, Christopher Bailey, to name a few.   



I was fortunate enough to attend the prestigious Gala evening, when the winning designers 2015 were announced by Laura Whitmore.  I was very impressed by the whole production, including the creative hair and makeup, the beautiful models and of course the fabulous designs. 
  

Backstage Lan Nguyen-Grealis, head of makeup creation, used an amazing array of products and colours by Bourjois. You must check out the Gala look with Bourjois' Intense Eyeshadow in black, Smokey Eye Pencil in black, and Colour Boost lip crayons in Proudly Naked. I also spied the new gel blush (Aqua Blush) which gave a subtle tint of colour to the cheeks. 



The catwalk hair and makeup look:
The beauty look was ultra chic!-dark smokey eyes teamed with nude lips blew me away, and I adored the sleek pony tails styled by L'Oreal Professional; one look that is easy to re-create at home! 




The George Gold Award (George at Asda were the sponsors) went to Hannah Wallace from Manchester College of Art. Her metallic sportswear and striking puffer jackets impressed the judges, featuring a wide range of shapes and textures that were definitely eye catching. 






Hannah will be one to watch…I will be looking forward to seeing her new designs for George coming soon!

Superfood raw pesto and zucchini noodles

On a recent quest to detoxify my body, I decided to recreate a healthy superfood pesto pasta recipe, that you will adore! This dish is really quick to make, and I often have enough left over for lunch the next day. 

I have always been a huge fan of colourful fruits and veggies, and I couldn't wait to have a go at inventing a super delicious bowl of raw vegan zucchine noodles. To be honest, the idea of eating raw zucchini may sound scary and unappetising– yet, this dish is surprisingly filling. The creamy nutty Pesto, and juicy Cherry Tomatoes make this dish so heavenly – nothing can beat homemade Pesto! I like mine with lots of pine nuts and tahini, and I usually top my 'zoodles' with peanuts, almonds and sunflower seeds for that extra crunch! This recipe is short and sweet, so enjoy: 

Ingredients for my vegan superfood pesto:
  • 1½ cups fresh basil leaves
  • 1½ cups of spinach leaves 
  • 1 avocado
  • ½ cups raw pine nuts
  • 1 tablespoon of peanut butter
  •  1 tablespoon of  cold-pressed coconut oil
  • 1 tablespoon of tahini
  • 1 medium garlic cloves
  • 1 tablespoon fresh lemon or lime juice
  • Spirulina powder (optional)
  • Salt to taste


Method:

 To start, add the basil, garlic, avocado and spinach leaves in a blender (or in a vitamix, nutribullet or food processor)  and pulse a few times more. Add the remaining ingredients constantly pulsing until blended. 
If you want a smoother and runnier one pesto, try adding a tablespoon of water. If you want thick pesto, add more raw pine nuts or sunflower seeds. 

Spiralize your zucchine (you can add carrots and any other vegetables to!) into long thin noodles. Mix in a large handful of cherry tomatoes and the super delicious pesto. 
Notes:
You can place your pesto in the freezer for 3 months as long as you coat it will liquid coconut oil in a sealed container. They taste really good after being frozen for 2 months. Just let them thaw out and cook it with something afterward. I usually store my pesto in the fridge for several weeks, and use the extra pesto as a dip for a highly nutritious snack with veggies and wholemeal pita bread.
